Prepare Chicken
- Season the chicken thighs with salt and black pepper. Let them marinate for at least 15 minutes.
Make Wet Batter
- In a mixing bowl, whisk together flour, buttermilk, egg, paprika, garlic powder, onion powder, cayenne pepper, and baking powder until smooth.
Heat Oil
- In a deep fryer, heat vegetable oil to 350°F (175°C).
Coat and Fry
- Dip each chicken thigh into the wet batter, allowing excess to drip off. Carefully place in the hot oil.
- Fry the chicken for about 10-12 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
Drain and Serve
- Remove the chicken from the oil and drain on paper towels. Serve hot.
