Vegan Irish Colcannon

A traditional Irish dish made vegan, featuring creamy mashed potatoes with kale and green onions.

Ingredients
  

Potatoes
  • 2 pounds russet potatoes peeled and cubed
Greens
  • 2 cups kale chopped
  • 4 scallions green onions chopped
Dairy Alternatives
  • 1/2 cup unsweetened almond milk
  • 1/4 cup vegan butter
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Potatoes
  1. Place the cubed potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
Cook the Greens
  1. In a separate pan, sauté the chopped kale and green onions in a little water or vegetable broth until wilted, about 5-7 minutes.
Mash the Potatoes
  1. Drain the potatoes and return them to the pot. Add the almond milk and vegan butter, then mash until smooth.
Combine and Season
  1. Fold the sautéed greens into the mashed potatoes. Season with salt and pepper to taste.
Serve
  1. Serve warm as a side dish, garnished with additional green onions if desired.
