Tuna Pasta Salad

Ingredients
  

Pasta
  • 8 oz pasta (fusilli or rotini) cooked and drained
Tuna
  • 2 cans tuna in water drained
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
Dressing
  • 1/4 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked pasta, drained tuna, cherry tomatoes, cucumber, red onion, and bell pepper.
Prepare Dressing
  1. In a small bowl, whisk together mayonnaise, olive oil, lemon juice, oregano, salt, and black pepper.
Combine Salad
  1. Pour the dressing over the pasta mixture and toss until everything is well coated.
Serve
  1. Garnish with fresh parsley and serve chilled or at room temperature.
