Ingredients
  

Main Ingredients
  • 1 lb ground turkey or chicken
  • 2 cups broccoli florets fresh or frozen
  • 1 cup brown rice uncooked
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Toppings
  • 1 cup shredded cheese cheddar or mozzarella
  • 1/4 cup fresh parsley chopped

Method
 

Cooking the Turkey
  1. In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, about 5-7 minutes.
  2. Stir in garlic powder, onion powder, paprika, salt, and pepper. Cook for an additional 2 minutes.
Cooking the Rice and Broccoli
  1. In a separate pot, cook brown rice according to package instructions, using chicken broth instead of water.
  2. In the last 5 minutes of cooking the rice, add broccoli florets to the pot to steam.
Combining Ingredients
  1. Once the turkey is cooked and the rice and broccoli are ready, combine them in the skillet. Mix well to combine all ingredients.
  2. Top with shredded cheese and cover the skillet until the cheese melts, about 2-3 minutes.
Serving
  1. Garnish with fresh parsley before serving. Serve warm and enjoy!
