Ingredients
  

Brisket
  • 4 pounds beef brisket trimmed
Dry Rub
  • 2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper optional for heat
Wood Pellets
  • 2 cups hickory wood pellets

Method
 

Prepare the Brisket
  1. Trim excess fat from the brisket, leaving about 1/4 inch for flavor.
  2. In a bowl, mix together the dry rub ingredients. Rub the mixture all over the brisket, ensuring even coverage.
Preheat the Traeger
  1. Preheat your Traeger grill to 225°F (107°C).
  2. Add hickory wood pellets to the hopper.
Smoke the Brisket
  1. Place the brisket on the grill grates, fat side up. Close the lid and smoke for about 6 hours, or until the internal temperature reaches 195°F (90°C).
  2. Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.
Serve
  1. Slice the brisket against the grain and serve with your favorite sides.
