Method
Prepare the Brisket
- Trim excess fat from the brisket, leaving about 1/4 inch for flavor.
- In a bowl, mix together the dry rub ingredients. Rub the mixture all over the brisket, ensuring even coverage.
Preheat the Traeger
- Preheat your Traeger grill to 225°F (107°C).
- Add hickory wood pellets to the hopper.
Smoke the Brisket
- Place the brisket on the grill grates, fat side up. Close the lid and smoke for about 6 hours, or until the internal temperature reaches 195°F (90°C).
- Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.
Serve
- Slice the brisket against the grain and serve with your favorite sides.
