Ingredients
  

Salad
  • 2 cups cabbage, shredded green or red
  • 1 cup carrots, grated
  • 1 cup red bell pepper, sliced
  • 1 cup cucumber, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro, chopped
  • 1/4 cup peanuts, chopped for garnish
Peanut Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 2 tablespoons water to thin the dressing

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced red bell pepper, sliced cucumber, chopped green onions, and chopped cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and water until smooth.
Combine and Serve
  1. Pour the peanut dressing over the salad and toss to combine. Garnish with chopped peanuts before serving.
