Ingredients
  

Slaw
  • 4 cups green cabbage, shredded
  • 1 cup carrots, grated
  • 1 cup red bell pepper, thinly sliced
  • 1 cup green onions, sliced
  • 1 cup fresh cilantro, chopped
  • 1 cup sugar snap peas, trimmed and halved
Peanut Ginger Dressing
  • 1/2 cup peanut butter smooth
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
  • 1 clove garlic, minced
  • 2 tablespoons water to thin the dressing

Method
 

Prepare the Slaw
  1. In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced red bell pepper, sliced green onions, chopped cilantro, and sugar snap peas.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, grated ginger, minced garlic, and water until smooth.
Combine and Serve
  1. Pour the peanut ginger dressing over the slaw and toss until all the ingredients are well coated. Serve immediately or refrigerate for up to an hour before serving.
