Ingredients
  

Cucumber Sandwiches
  • 1 medium cucumber thinly sliced
  • 4 slices white bread crusts removed
  • 2 tablespoons cream cheese softened
  • 1 tablespoon fresh dill chopped
  • to taste salt
Egg Salad Sandwiches
  • 4 large eggs hard-boiled and chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1 tablespoon chives chopped
  • to taste salt
  • to taste pepper
  • 4 slices whole grain bread crusts removed
Smoked Salmon Sandwiches
  • 4 slices rye bread crusts removed
  • 4 ounces smoked salmon
  • 2 tablespoons cream cheese softened
  • 1 tablespoon capers drained
  • 1 tablespoon lemon juice
  • to taste fresh dill for garnish

Method
 

Cucumber Sandwiches
  1. In a mixing bowl, combine cream cheese, dill, and salt. Mix until smooth.
  2. Spread the cream cheese mixture on one side of each slice of bread.
  3. Layer cucumber slices on top of the cream cheese, then top with another slice of bread.
  4. Cut into quarters or desired shapes using a cookie cutter.
Egg Salad Sandwiches
  1. In a bowl, mix chopped eggs, mayonnaise, mustard, chives, salt, and pepper.
  2. Spread the egg salad mixture on one slice of bread and top with another slice.
  3. Cut into quarters or desired shapes using a cookie cutter.
Smoked Salmon Sandwiches
  1. Spread cream cheese on one side of each slice of rye bread.
  2. Layer smoked salmon on top of the cream cheese, then sprinkle with capers and lemon juice.
  3. Top with another slice of bread and cut into quarters or desired shapes using a cookie cutter.
