Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons cold water
For the filling
  • 4 cups fresh apricots halved and pitted
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Method
 

Prepare the crust
  1. In a mixing bowl, combine flour, sugar, and cold butter. Mix until crumbly.
  2. Add egg yolk and cold water. Mix until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the dough and fit it into the tart pan.
Prepare the filling
  1. In a bowl, combine apricots, sugar, lemon juice, cornstarch, and vanilla. Mix gently.
  2. Pour the apricot mixture into the prepared crust.
  3. Bake in the preheated oven for 30-35 minutes, or until the apricots are soft and the crust is golden.
Serve
  1. Allow to cool slightly before slicing. Serve warm or at room temperature.
