Ingredients
  

Main Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 cup salsa your choice of mild or spicy
  • 1 packet taco seasoning
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup bell pepper diced
  • 1 cup onion diced
Taco Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1 avocado sliced

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the crockpot.
  2. Add the salsa and taco seasoning over the chicken.
  3. Add the black beans, corn, bell pepper, and onion on top.
Cook the Chicken
  1. Cover and cook on low for 6 hours or high for 3 hours.
  2. After cooking, shred the chicken with two forks and mix with the other ingredients.
Serve
  1. Serve the taco chicken in tortillas or over rice, topped with cheese, sour cream, lettuce, tomatoes, and avocado.
