Ingredients
  

Casserole Base
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa
  • 2 cups tortilla chips crushed
  • 2 cups shredded cheese cheddar or Mexican blend
Toppings
  • 1 cup sour cream for serving
  • 1 cup shredded lettuce for serving
  • 1 cup diced tomatoes for serving
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes.
  4. In a baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then half of the shredded cheese.
  5. Repeat the layers with the remaining chips, beef mixture, and cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes.
  2. Top with sour cream, lettuce, tomatoes, and jalapeños before serving.
