Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
Strawberry Rhubarb Topping
  • 1 cup strawberries sliced
  • 1 cup rhubarb chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the baking pan.
Make the Cheesecake Filling
  1. In another bowl, beat the softened cream cheese, sugar, and vanilla extract with an electric mixer until smooth. Add eggs one at a time, mixing well after each addition.
Combine and Bake
  1. Pour the cheesecake filling over the crust in the baking pan. Bake for 25-30 minutes or until the center is set. Remove from oven and let cool.
Prepare the Topping
  1. In a saucepan, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, about 10 minutes. Let cool.
Assemble and Chill
  1. Spread the strawberry rhubarb topping over the cooled cheesecake. Refrigerate for at least 2 hours before cutting into bars.

Notes
