Ingredients
  

Salmon
  • 4 fillets salmon fillets skinless
Sriracha Honey Sauce
  • 1/4 cup sriracha
  • 1/4 cup honey
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon rice vinegar
Rice and Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup edamame shelled
  • 1/4 cup green onions sliced
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Sriracha Honey Sauce
  1. In a mixing bowl, whisk together sriracha, honey, soy sauce, and rice vinegar until well combined.
Bake the Salmon
  1. Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper.
  2. Brush the sriracha honey sauce generously over the salmon fillets.
  3. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Assemble the Bowls
  1. In each bowl, place a serving of cooked rice.
  2. Top with baked salmon, cucumber, carrots, and edamame.
  3. Drizzle with any remaining sriracha honey sauce and garnish with green onions and sesame seeds.
