  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 medium tomato, diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup frozen peas optional
  • 1/4 cup fresh cilantro, chopped for garnish

Method
 

Cooking Spanish Rice
  1. In a medium saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for 2-3 minutes until the tomato softens.
  4. Add the rice to the saucepan and stir to coat the rice with the tomato mixture.
  5. Pour in the broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
  6. If using, stir in the frozen peas during the last 5 minutes of cooking.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with chopped cilantro before serving.

Notes
