Method
Prepare the Flank Steak
- Trim any excess fat from the flank steak and pat it dry with paper towels.
- In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create the dry rub.
- Rub the spice mixture evenly over the flank steak, covering all sides. Wrap in plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Smoke the Steak
- Preheat your smoker to 225°F (107°C).
- Add the soaked hickory wood chips to the smoker.
- Place the flank steak in the smoker and smoke for about 2 to 2.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Rest and Serve
- Remove the flank steak from the smoker and let it rest for 10-15 minutes before slicing.
- Slice against the grain into thin strips and serve immediately.
