Ingredients
  

Flank Steak
  • 2 pounds flank steak trimmed of excess fat
Dry Rub
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat
Wood Chips
  • 2 cups hickory wood chips soaked in water for 30 minutes

Method
 

Prepare the Flank Steak
  1. Trim any excess fat from the flank steak and pat it dry with paper towels.
  2. In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create the dry rub.
  3. Rub the spice mixture evenly over the flank steak, covering all sides. Wrap in plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Smoke the Steak
  1. Preheat your smoker to 225°F (107°C).
  2. Add the soaked hickory wood chips to the smoker.
  3. Place the flank steak in the smoker and smoke for about 2 to 2.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Rest and Serve
  1. Remove the flank steak from the smoker and let it rest for 10-15 minutes before slicing.
  2. Slice against the grain into thin strips and serve immediately.
