Ingredients
  

Beef Chuck Roast
  • 3 pounds beef chuck roast trimmed of excess fat
Dry Rub
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat
Wood Chips
  • 2 cups hickory wood chips soaked in water for 30 minutes

Method
 

Preparation
  1. Preheat the smoker to 225°F (107°C).
  2. In a small bowl, mix together all the ingredients for the dry rub.
  3. Rub the dry mixture all over the beef chuck roast, ensuring it's evenly coated.
  4. Let the roast sit at room temperature for about 30 minutes to absorb the flavors.
Smoking the Roast
  1. Place the soaked wood chips in the smoker box or directly on the coals.
  2. Put the beef chuck roast on the smoker grates, fat side up.
  3. Smoke the roast for approximately 4 hours, or until the internal temperature reaches 195°F (90°C) for optimal tenderness.
  4. Remove the roast from the smoker and let it rest for at least 30 minutes before slicing.

Notes
