Ingredients
  

Salad Base
  • 1 lb shrimp peeled and deveined
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/2 cup cucumber diced
Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Shrimp
  1. In a skillet over medium heat, cook the shrimp for about 2-3 minutes on each side until pink and opaque.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado.
  2. Add the cooked shrimp on top and drizzle with the dressing.
  3. Toss gently to combine and serve immediately on a serving platter.
