Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
Toppings
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 cup whipped cream for serving

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a greased 9x13 inch baking pan. Bake for 10 minutes, then remove from oven and let cool.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add sugar and vanilla extract, mixing until combined. Add eggs one at a time, mixing well after each addition. Finally, mix in sour cream until smooth.
  3. Pour the cheesecake filling over the cooled crust and spread evenly.
Bake and Cool
  1. Bake in the preheated oven for 30-35 minutes, or until the center is set and slightly jiggly. Remove from oven and let cool to room temperature.
  2. Refrigerate for at least 4 hours or overnight before serving.
Serve
  1. Once chilled, cut into bars and top with sliced strawberries, blueberries, and a dollop of whipped cream.

Notes
