Ingredients
  

Salad Ingredients
  • 2 cups fresh pineapple, diced use ripe pineapple
  • 1 large cucumber, diced preferably English cucumber
  • 1/4 cup red onion, finely chopped optional
  • 1/4 cup fresh cilantro, chopped for garnish
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional for sweetness

Method
 

Prepare the Ingredients
  1. In a mixing bowl, combine the diced pineapple and cucumber.
  2. Add the finely chopped red onion and cilantro to the bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine.
  2. Serve immediately or chill in the refrigerator for 30 minutes before serving.
