Pesto Pasta with Cherry Tomatoes

Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or linguine) Cooked according to package instructions
Pesto
  • 2 cups Fresh Basil Packed
  • 1/2 cup Parmesan Cheese Grated
  • 1/2 cup Pine Nuts Lightly toasted
  • 2 cloves Garlic Minced
  • 1/2 cup Olive Oil Extra virgin
  • 1/4 teaspoon Salt To taste
  • 1/4 teaspoon Pepper To taste
Toppings
  • 1 cup Cherry Tomatoes Halved
  • 1/4 cup Fresh Basil Chopped, for garnish

Method
 

Prepare the Pesto
  1. In a blender, combine basil, Parmesan cheese, pine nuts, garlic, salt, and pepper. Blend until smooth.
  2. With the blender running, slowly add olive oil until fully incorporated.
Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander, reserving 1/2 cup of pasta water.
Combine and Serve
  1. In a skillet, combine the cooked pasta, pesto, and reserved pasta water. Toss to coat evenly.
  2. Add halved cherry tomatoes and toss gently.
  3. Serve immediately, garnished with fresh basil.

Notes

For a creamier pesto, add a splash of heavy cream to the pasta before serving.
