Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or linguine) Choose your favorite type.
Pesto
  • 2 cups Fresh basil leaves Packed.
  • 1/2 cup Pine nuts Lightly toasted.
  • 1/2 cup Parmesan cheese Grated.
  • 2 cloves Garlic Minced.
  • 1/2 cup Olive oil Extra virgin.
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
Vegetables
  • 2 cups Cherry tomatoes Halved.
  • 1 cup Spinach Fresh.

Method
 

Prepare the Pesto
  1. In a blender, combine basil leaves, pine nuts, Parmesan cheese, garlic, salt, and pepper. Blend until smooth.
  2. With the blender running, slowly add olive oil until fully incorporated.
Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Combine and Serve
  1. In a large skillet, combine the cooked pasta, pesto, cherry tomatoes, and spinach. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  2. Serve immediately, garnished with additional Parmesan if desired.
