Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Pesto Sauce
  • 2 cups fresh basil leaves packed
  • 1/2 cup parmesan cheese grated
  • 1/2 cup olive oil extra virgin
  • 1/3 cup pine nuts toasted
  • 2 cloves garlic minced
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
Toppings
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup fresh basil for garnish

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Make the Pesto
  1. In a blender, combine basil leaves, parmesan cheese, pine nuts, garlic, salt, and black pepper. Blend until finely chopped.
  2. With the blender running, slowly add olive oil until the mixture is smooth and creamy.
Combine and Serve
  1. In a large serving bowl, combine the drained pasta with the pesto sauce. Toss to coat, adding reserved pasta water as needed to reach desired consistency.
  2. Top with cherry tomatoes and fresh basil before serving.

Notes

Feel free to customize the pesto by adding spinach or arugula for a different flavor. You can also substitute walnuts for pine nuts.
