Cake
  • 1 box white cake mix plus ingredients required on the box
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
Poke Filling
  • 1 can sweetened condensed milk
  • 1/2 cup blue raspberry gelatin
  • 1/2 cup strawberry gelatin
Topping
  • 2 cups whipped cream or whipped topping
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 tablespoon red sprinkles optional

Method

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
  2. In a mixing bowl, combine the white cake mix, water, vegetable oil, and eggs. Mix until smooth.
  3. Pour the batter into the prepared baking dish and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
Poke the Cake
  1. Remove the cake from the oven and let it cool for 10 minutes.
  2. Using the handle of a wooden spoon or a toothpick, poke holes all over the top of the cake.
  3. In a separate bowl, mix the sweetened condensed milk with the blue raspberry and strawberry gelatin until well combined.
  4. Pour the gelatin mixture over the cake, ensuring it fills the holes.
  5. Refrigerate the cake for at least 2 hours to allow the flavors to meld.
Add Topping
  1. Spread the whipped cream over the top of the chilled cake.
  2. Decorate with sliced strawberries and blueberries, arranging them in a patriotic pattern.
  3. Sprinkle with red sprinkles if desired.
Serve
  1. Slice and serve chilled. Enjoy your festive patriotic poke cake!
