Ingredients

  • 4-6 thighs chicken thighs bone-in, skin-on, patted bone-dry
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp unsalted butter
  • 2 apples Honeycrisp apples cut into wedges
  • 2 shallots shallots thinly sliced
  • 3 cloves garlic finely minced
  • 1 cup pure apple cider unfiltered, non-alcoholic
  • 1/2 cup chicken broth low-sodium
  • 1 tbsp Dijon mustard whole grain
  • 1 tbsp pure maple syrup dark amber
  • 1 tbsp apple cider vinegar
  • 2 sprigs fresh rosemary chopped
  • 3 sprigs fresh thyme leaves stripped
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper freshly cracked

Method

  1. Season & Crisp the Chicken Skin: Pat the chicken thighs thoroughly dry on both sides with paper towels (moisture prevents a crackling crisp skin). Season generously on both sides with fine sea salt and freshly cracked black pepper. Heat 1 tablespoon olive oil in a large 12-inch cast iron skillet over medium-high heat until shimmering. Place chicken thighs skin-side down in the pan. Cook undisturbed for 8 to 10 minutes until the skin turns deeply golden-brown, blistered, and shatteringly crisp. Flip and cook for 3 minutes on the reverse side. Transfer the chicken to a warm plate (it will finish cooking in the glaze later).
  2. Caramelize the Apples & Shallots: Pour off all but 1 tablespoon of rendered chicken drippings from the skillet. Reduce heat to medium, then add 1 tablespoon of butter. Add the sliced Honeycrisp apples and shallots in a single layer. Sauté for 4 to 5 minutes, tossing gently, until the apple wedges develop golden caramelized edges and the shallots soften and turn translucent. Stir in the minced garlic, chopped rosemary, and thyme leaves, cooking for 60 seconds until fragrant.
  3. Deglaze & Simmer the Spiced Cider Glaze: Pour in the pure unfiltered apple cider, chicken broth, Dijon mustard, maple syrup, and apple cider vinegar. Use a wooden spoon to scrape up all the savory browned bits (fond) stuck to the bottom of the skillet. Bring the liquid to a lively bubbling simmer over medium heat and let it reduce for 4 to 5 minutes until it begins to concentrate and thicken into an amber glaze.
  4. Nestle Chicken & Glaze: Return the chicken thighs to the skillet skin-side up, nestling them snugly between the caramelized apple slices (keep the crispy skins above the liquid level so they stay ultra-crunchy). Reduce heat to medium-low, cover loosely with a lid or foil, and simmer for 8 to 10 minutes until the chicken reaches an internal temperature of 165°F (74°C) with an instant-read thermometer.
  5. Finish with Velvet Pan Emulsion: Uncover the pan, transfer chicken and apples to a serving platter, and swirl the remaining 1 tablespoon of cold butter into the bubbling pan sauce for 60 seconds until glossy, unctuous, and thickened. Spoon the glistening cider reduction over the chicken and apples. Garnish with fresh rosemary sprigs and cracked pepper, and serve immediately.

Notes

• Pick the Right Apple Variety: Choose a firm, high-acid apple that holds its shape when seared in butter—Honeycrisp, Pink Lady, or Gala are ideal. Soft apples like McIntosh or Red Delicious will turn mushy in the pan.
• Keep the Skin Above Sauce: When returning the seared chicken to the simmering cider pan, nestle the pieces so the crispy skin stays above the sauce line. This preserves maximum skin crunch while the meat absorbs all the luscious cider flavors below.
• Cider vs Apple Juice: Always use fresh, cloudy, unfiltered refrigerated apple cider rather than clear commercial apple juice. Real cider contains natural apple tannins, pulp, and spices that reduce into a glossy, velvety glaze without needing cornstarch.
