Ingredients
  

Chocolate Mousse Cups
  • 1 cup heavy cream for whipping
  • 4 oz dark chocolate chopped
  • 2 large egg whites room temperature
  • 2 tbsp sugar
  • 1 tsp vanilla extract
Mini Fruit Tarts
  • 1 pkg pre-made tart shells mini size
  • 1 cup pastry cream store-bought or homemade
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 2 tbsp apricot jam for glaze
Mini Cheesecakes
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg room temperature
  • 1/4 cup sour cream
  • 1 pkg mini graham cracker crusts

Method
 

Chocolate Mousse Cups
  1. Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, beat the egg whites and sugar until stiff peaks form.
  4. Fold the melted chocolate into the whipped cream, then gently fold in the egg whites.
  5. Spoon the mousse into mini cups and refrigerate for at least 2 hours before serving.
Mini Fruit Tarts
  1. Fill each tart shell with pastry cream.
  2. Top with mixed berries, arranging them decoratively.
  3. Heat apricot jam until melted and brush over the fruit for a shiny glaze.
Mini Cheesecakes
  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
  3. Add the egg and sour cream, mixing until combined.
  4. Pour the mixture into the mini graham cracker crusts.
  5. Bake for 15-20 minutes until set. Let cool and refrigerate before serving.
