Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 5 tablespoons butter melted
Filling
  • 8 ounces cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large ripe bananas mashed
  • 2 large eggs
  • 1/4 cup sour cream

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture evenly into the bottom of a muffin tin to form the crust.
Make the Filling
  1. In another mixing bowl, beat the softened cream cheese and sugar until smooth.
  2. Add vanilla extract, mashed bananas, eggs, and sour cream. Mix until fully combined and smooth.
Bake
  1. Pour the filling over the crust in the muffin tin, filling each cup about 3/4 full.
  2. Bake in the preheated oven for 20-25 minutes, or until the centers are set.
  3. Allow to cool, then refrigerate for at least 2 hours before serving.
