Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 1/4 cup mayonnaise preferably homemade
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1 tablespoon fresh chives chopped
Topping
  • 1 tablespoon paprika for garnish
  • 2 slices bacon cooked and crumbled

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer the eggs to an ice bath to cool for 5 minutes, then peel and slice in half lengthwise.
Make the Filling
  1. Remove the yolks from the egg halves and place them in a mixing bowl.
  2. Add mayonnaise, Dijon mustard, sweet pickle relish, white vinegar, salt, and black pepper to the yolks. Mash with a fork until smooth.
  3. Stir in chopped chives for added flavor.
Assemble the Deviled Eggs
  1. Spoon or pipe the yolk mixture back into the egg whites.
  2. Sprinkle with paprika and top with crumbled bacon before serving.

Notes
