Ingredients
  

Cheese Base
  • 2 cups white cheese such as Monterey Jack or Queso Blanco, shredded
  • 1 cup milk whole or 2%
  • 1 tablespoon butter unsalted
  • 1 tablespoon flour all-purpose
Flavorings
  • 1 teaspoon jalapeño finely chopped, optional for heat
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste

Method
 

Prepare the Cheese Sauce
  1. In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute to create a roux.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Add the shredded cheese and stir until melted and smooth.
Add Flavorings
  1. Stir in the jalapeño, garlic powder, onion powder, cumin, salt, and pepper. Mix well and heat through.
  2. Remove from heat and serve warm with tortilla chips or as a topping for your favorite Mexican dishes.

Notes

For a spicier dip, increase the amount of jalapeño or add diced green chilies.
