Ingredients
  

Pasta and Corn
  • 8 oz elbow macaroni or any pasta of choice
  • 2 cups sweet corn fresh or canned, drained
  • 1 cup cherry tomatoes halved
  • 1 cup red onion finely chopped
  • 1 cup cilantro chopped
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Toppings
  • 1/4 cup cotija cheese crumbled
  • 1 avocado sliced for garnish

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, sweet corn, cherry tomatoes, red onion, and cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the pasta mixture and toss to combine thoroughly.
Serve
  1. Top with crumbled cotija cheese and sliced avocado before serving. Enjoy!
