Ingredients
  

Dip Base
  • 2 cups sweet corn fresh or canned
  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 1 cup mayonnaise
  • 1 cup cotija cheese crumbled
Seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1 tablespoon lime juice freshly squeezed
Garnish
  • 2 tablespoons cilantro chopped
  • 1 tablespoon jalapeño finely chopped, optional

Method
 

Prepare the Dip
  1. In a mixing bowl, combine sweet corn, cream cheese, sour cream, mayonnaise, and cotija cheese.
  2. Add chili powder, cumin, garlic powder, salt, black pepper, and lime juice. Mix until well combined.
Cook the Dip
  1. Heat a skillet over medium heat and add the corn mixture.
  2. Cook for about 10 minutes, stirring occasionally, until heated through.
Garnish and Serve
  1. Transfer the dip to a serving dish and garnish with chopped cilantro and jalapeño if desired.
  2. Serve warm with tortilla chips or vegetables.

Notes

For a smoky flavor, consider adding smoked paprika to the seasoning.
