Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Rice
  • 1 cup long-grain white rice rinsed
Vegetables
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 cup frozen peas
Spices
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquids
  • 2 cups chicken broth low sodium
  • 1 tablespoon olive oil for cooking

Method
 

Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with cumin, chili powder, garlic powder, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
Adding Vegetables and Rice
  1. Add diced bell pepper and onion to the skillet. Sauté for 3-4 minutes until softened. Stir in the rice and cook for another 2 minutes, allowing the rice to absorb the flavors.
Cooking the Dish
  1. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and has absorbed the liquid.
Finishing Touches
  1. Stir in the frozen peas and let sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
