Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 6 cups chicken broth low sodium
  • 2 cups cooked chicken shredded
  • 1 cup heavy cream for creaminess
  • 1 lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Prepare the Soup
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
  4. Stir in the shredded chicken, heavy cream, lemon juice, oregano, salt, and pepper. Cook for another 5-10 minutes until heated through.
  5. Taste and adjust seasoning if necessary. Remove from heat.
  6. Serve hot, garnished with fresh parsley.
