Method
Prepare the sponge cake
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a mixing bowl, whisk together the eggs and sugar until light and fluffy.
- Add the melted butter and vanilla extract, mixing well.
- Sift in the flour and baking powder, gently folding until just combined.
- Pour the batter into the prepared cake pan and bake for 20-25 minutes or until a toothpick comes out clean.
- Let the cake cool completely before removing from the pan.
Make the mango mousse
- In a bowl, combine the mango puree, lemon juice, and dissolved gelatin.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Gently fold the mango mixture into the whipped cream until well combined.
Assemble the cake
- Cut the cooled sponge cake into two layers.
- Place one layer on a serving plate and spread half of the mango mousse on top.
- Add the second layer of cake and top with the remaining mousse.
- Refrigerate for at least 4 hours or until set.
- Slice and serve chilled.
