Ingredients
  

Potatoes
  • 2 pounds russet potatoes peeled and diced
Dressing
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Mix-ins
  • 6 slices bacon cooked and crumbled
  • 1 cup cheddar cheese shredded
  • 1 cup green onions sliced
  • 1/2 cup sour cream

Method
 

Prepare Potatoes
  1. In a large pot, cover the diced potatoes with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool.
Make Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooled potatoes, dressing, crumbled bacon, cheddar cheese, green onions, and sour cream. Mix gently until well combined.
Chill and Serve
  1. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
