Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 5 tablespoons unsalted butter melted
Filling
  • 16 ounces cream cheese softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1 cup blueberries fresh or frozen

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture evenly into the bottom of a muffin tin to form the crust.
  3. Bake for 10 minutes, then remove from the oven and let cool.
Make the filling
  1. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  2. Add the eggs one at a time, mixing well after each addition. Then add vanilla extract, sour cream, lemon juice, and lemon zest. Mix until combined.
  3. Gently fold in the blueberries.
Bake the cheesecakes
  1. Pour the filling over the cooled crusts in the muffin tin, filling each cup about 3/4 full.
  2. Bake for 20 minutes or until the centers are set. Remove from the oven and let cool to room temperature.
  3. Chill in the refrigerator for at least 2 hours before serving.
