Ingredients
  

Lamb Loin
  • 2 pounds lamb loin trimmed
  • 2 tablespoons olive oil for searing
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper freshly ground
  • 2 teaspoons rosemary fresh, chopped
  • 2 teaspoons garlic minced
  • 1 cup vegetable broth for basting

Method
 

Prepare the Lamb
  1. Preheat the oven to 400°F (200°C).
  2. Rub the lamb loin with olive oil, salt, pepper, rosemary, and garlic.
Sear the Lamb
  1. Heat a roasting pan over medium-high heat and sear the lamb loin on all sides until browned, about 3-4 minutes per side.
Roast the Lamb
  1. Transfer the lamb to the oven and roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  2. Baste the lamb with vegetable broth halfway through cooking.
Rest and Serve
  1. Remove the lamb from the oven and let it rest for 10 minutes before slicing.
  2. Slice and serve with your choice of sides.
