Ingredients
  

For the Grilled Shrimp
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil for marinating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Avocado Corn Salsa
  • 1 cup corn fresh or canned
  • 1 large avocado diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt
For Serving
  • 2 cups cooked rice white or brown
  • 1 lime cut into wedges

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine the shrimp, olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat evenly and let marinate for 10 minutes.
Make the Avocado Corn Salsa
  1. In another bowl, mix together the corn, diced avocado, red onion, cherry tomatoes, cilantro, lime juice, and salt. Set aside.
Grill the Shrimp
  1. Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers and grill for 2-3 minutes on each side until pink and cooked through.
Assemble the Bowl
  1. In serving bowls, add a base of cooked rice, top with grilled shrimp, and spoon the avocado corn salsa over the top. Serve with lime wedges.
