Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
Dressing
  • 1 cup mayonnaise preferably organic
  • 1/2 cup blue cheese crumbled
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey optional for sweetness
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded carrots, and shredded red cabbage.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, blue cheese, apple cider vinegar, honey, Dijon mustard, garlic powder, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the cabbage mixture and toss until the vegetables are evenly coated.
Chill and Serve
  1. Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
