Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber sliced
  • 1/2 cup red onion thinly sliced
Goat Cheese
  • 4 oz goat cheese crumbled
Vinaigrette
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground, to taste

Method
 

Prepare the Salad
  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Crumble the goat cheese over the top of the salad.
Make the Vinaigrette
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the vinaigrette over the salad and toss gently to combine.
  2. Serve immediately.
