Ingredients
  

Lamb Crown
  • 1 each crown roast of lamb about 4-5 lbs
Marinade
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
Garnish
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Method
 

Prepare the Marinade
  1. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to create the marinade.
Marinate the Lamb
  1. Rub the marinade all over the crown roast of lamb, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat the Oven
  1. Preheat your oven to 375°F (190°C).
Roast the Lamb
  1. Place the marinated lamb in a roasting pan and roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
Rest and Serve
  1. Remove the lamb from the oven and let it rest for 15 minutes before carving. Garnish with fresh rosemary and thyme sprigs before serving.
