Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Pastry Cream
  • 2 cups milk whole
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup strawberries sliced
  • 1 cup kiwi sliced
  • 1 cup blueberries
  • 1 cup peaches sliced

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Add egg yolk and ice water, mix until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out dough and fit into tart pan. Prick with a fork.
  4. Bake for 20-25 minutes until golden. Let cool.
Make the Pastry Cream
  1. In a saucepan, heat milk until steaming. In a bowl, whisk sugar, cornstarch, salt, and egg yolks.
  2. Slowly add hot milk to egg mixture, whisking constantly. Return to saucepan and cook until thickened.
  3. Remove from heat and stir in vanilla. Cool completely.
Assemble the Tart
  1. Spread pastry cream evenly in the cooled tart shell.
  2. Arrange sliced fruits on top of the pastry cream.
  3. Chill in the refrigerator for at least 1 hour before serving.
