Ingredients
  

Squash
  • 2 medium Yellow Squash sliced into rounds
  • 1 cup All-Purpose Flour for dredging
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 cup Cornmeal for coating
  • 2 cups Vegetable Oil for frying

Method
 

Preparation
  1. Slice the yellow squash into 1/4 inch rounds.
  2. In a bowl, mix flour, salt, and pepper.
  3. Dredge each squash slice in the flour mixture, shaking off excess.
  4. Coat the floured squash slices in cornmeal.
Frying
  1. Heat vegetable oil in a frying pan over medium heat.
  2. Fry the coated squash slices in batches until golden brown, about 3-4 minutes per side.
  3. Remove from oil and drain on paper towels.
  4. Serve hot, garnished with additional salt if desired.
