Ingredients
  

  • 100 g almond flour
  • 200 g powdered sugar
  • 90 g aged egg whites aged for at least 24 hours
  • 50 g granulated sugar
  • pinch salt
  • food coloring a few drops, optional
  • 100 g butter softened
  • 200 g powdered sugar
  • 1 tsp vanilla extract
  • 50 g fruit puree or chocolate for flavor

Method
 

  1. Prepare the almond flour and powdered sugar mixture.
  2. Whip the aged egg whites and gradually add the granulated sugar until stiff peaks form.
  3. Fold the dry mixture into the whipped egg whites gently.
  4. Add food coloring if desired and mix until combined.
  5. Pipe the macaron batter onto a baking sheet lined with parchment paper.
  6. Allow the macarons to rest for about 30 minutes until a skin forms.
  7. Bake in a preheated oven at 150°C (300°F) for about 15 minutes.
  8. Once cooled, prepare the filling by creaming the softened butter with powdered sugar and vanilla extract, then fold in the fruit puree or chocolate.
  9. Assemble the macarons by sandwiching the filling between two shells.

Notes

Store macarons in an airtight container at room temperature for up to three days, refrigerated for a week, or frozen for two months. Allow to come to room temperature before serving.
