Ingredients

  • 2 cups all-purpose flour
  • 3 tbsp dark brown sugar packed
  • 1.5 tsp ground ginger
  • 1.5 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1.75 cups buttermilk whole cultured
  • 1/4 cup dark molasses unsulphured
  • 2 large eggs room temperature
  • 3 tbsp unsalted butter melted
  • 1 tsp pure vanilla extract
  • spiced butter & maple syrup for serving

Method

  1. Whisk Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, dark brown sugar, ground ginger, cinnamon, nutmeg, cloves, allspice, baking powder, baking soda, and fine sea salt until thoroughly blended and spice clumps are eliminated.
  2. Whisk Wet Ingredients: In a separate medium bowl, whisk together the buttermilk, dark molasses, eggs, melted butter, and pure vanilla extract until completely smooth and emulsified.
  3. Combine into Batter: Pour the wet molasses mixture into the dry flour bowl. Stir gently with a rubber spatula just until combined and no dry flour streaks remain. Do not overmix; small flour lumps are completely fine and keep the pancakes ultra-fluffy.
  4. Rest the Batter: Let the pancake batter rest on the counter for 8 to 10 minutes. The buttermilk acid will activate the baking soda and powder, creating tiny air bubbles throughout the thick batter.
  5. Heat Griddle & Cook: Heat a seasoned cast-iron skillet or nonstick griddle over medium heat (approx 350°F). Brush lightly with melted butter. Pour 1/3 cup of batter per pancake. Cook for 2.5 to 3 minutes until bubbles form across the surface and edges look set.
  6. Flip & Serve Golden: Gently flip with a wide spatula and cook for an additional 1.5 to 2 minutes until deeply golden-brown and cooked through the center. Transfer to a warm plate and serve stacked high with cinnamon butter, warm maple syrup, and a sprinkle of powdered sugar.
