Elote is a traditional Mexican street food featuring grilled corn on the cob slathered in a creamy sauce, topped with cheese, chili powder, and lime.

Ingredients
  

Corn
  • 4 ears fresh corn on the cob husked
Sauce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
Toppings
  • 1/2 cup cotija cheese crumbled
  • 1 teaspoon chili powder or to taste
  • 1 lime lime wedges for serving

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat. Place the husked corn directly on the grill grates.
  2. Grill the corn for about 10-15 minutes, turning occasionally until charred and cooked through.
Preparing the Sauce
  1. In a bowl, mix together mayonnaise, sour cream, lime juice, garlic powder, and salt until well combined.
Assembling the Elote
  1. Once the corn is grilled, remove it from the grill and brush each ear generously with the sauce mixture.
  2. Sprinkle crumbled cotija cheese and chili powder over the sauced corn.
  3. Serve with lime wedges on the side.

Notes

For a spicier version, add hot sauce to the sauce mixture or sprinkle additional chili powder on top.
