  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh fruits e.g., strawberries, blueberries, kiwi

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined. In another bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  4. Spread the dough evenly onto a baking sheet lined with parchment paper, about 1/4 inch thick.
  5. Bake in the preheated oven for 8-10 minutes or until lightly golden. Allow to cool completely.
Prepare the Topping
  1. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Spread the cream cheese mixture evenly over the cooled cookie base.
  3. Top with mixed fresh fruits, arranging them as desired.
  4. Cut into mini pizzas using a cookie cutter or knife and serve immediately.
