Ingredients
  

Shortbread Layer
  • 1 cup Unsalted butter softened
  • 1/2 cup Granulated sugar
  • 1 cup All-purpose flour sifted
  • 1/4 cup Cornstarch
Caramel Layer
  • 1 can Sweetened condensed milk
  • 1 cup Brown sugar light or dark
  • 1/4 cup Unsalted butter
Topping
  • 1 cup Milk chocolate or dark chocolate
  • 1 cup Easter mini eggs crushed

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together 1 cup of softened unsalted butter and 1/2 cup of granulated sugar until light and fluffy.
  3. Gradually add 1 cup of sifted all-purpose flour and 1/4 cup of cornstarch, mixing until combined.
  4. Press the mixture into a greased baking pan and bake for 20 minutes or until golden.
Caramel Preparation
  1. In a saucepan, combine 1 can of sweetened condensed milk with 1 cup of brown sugar and 1/4 cup of unsalted butter. Cook over medium heat until the sugar has dissolved, stirring frequently.
  2. Pour the caramel mixture over the baked shortbread layer and allow to cool.
Chocolate Topping
  1. Melt 1 cup of milk chocolate (or dark chocolate) and pour it over the cooled caramel layer.
  2. Sprinkle 1 cup of crushed Easter mini eggs on top and let set before slicing.
