  • 1 cup fresh or frozen strawberry halves
  • 1.75 cups creamy non-dairy milk
  • 1/4 cup unsweetened vegan yogurt
  • 2 tablespoons grade A maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 small lemon juice (about 1 tablespoon)
  • 1 pinch salt
Oats and Seeds
  • 2 cups quick-cooking or rolled oats
  • 2 tablespoons chia seeds
  • 3/4 cup diced strawberries

Method
 

Preparation
  1. Add the strawberries to a high-speed blender along with the milk, yogurt, maple syrup, vanilla, lemon juice, and salt. Blend on high for 45 to 60 seconds until finely blended.
  2. In a large bowl, add the oats and chia seeds, mix well, then pour in the strawberry milk. Add the chopped strawberries and stir until combined. Let sit for at least 5 minutes to absorb some liquid.
  3. Transfer the oatmeal to jars or containers and store in the fridge for at least 4 hours or overnight. They can be enjoyed cold or warm, and leftovers will keep in the fridge for up to 5 days.
