  • 1 cup unsalted butter softened
  • 4 ounces full-fat brick cream cheese softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract

  • extra freeze-dried raspberry powder for garnish

Method
 

Baking Directions
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine freeze-dried raspberries, flour, baking powder, and salt.
  3. In another bowl, beat together softened butter, cream cheese, and granulated sugar until smooth.
  4. Add the egg, vanilla extract, and almond extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  6. If using, fold in chopped chocolate.
  7. Scoop dough onto baking sheets lined with parchment paper.
  8. Bake for 13 minutes or until cookies are lightly golden.
  9. Let cool before garnishing with raspberry powder, if desired.
