Salad Ingredients
  • 10 ounces shredded coleslaw mix
  • ½ cup snap peas
  • ½ whole English cucumber julienned
  • 1 whole red pepper julienned
  • 1 whole jalapeño pepper sliced thin (stems and membranes removed)
  • cup rough chopped cilantro
  • 4 whole scallions cut into thin 1-inch julienne strips
  • 2 pounds skinless, boneless chicken thighs
Marinade and Dressing Ingredients
  • 2 tablespoons finely grated fresh ginger
  • 4 cloves garlic minced
  • 5 teaspoons Chinese chile-garlic sauce
  • 3 teaspoons honey
  • 3 teaspoons Asian sesame oil
  • 2 fresh limes juiced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • cup rice vinegar
  • 2 tablespoons reduced sodium Tamari
  • 1 tablespoon sesame oil
  • 4 teaspoons honey
  • 4 cloves garlic minced
  • 2 teaspoons minced fresh ginger
  • 1 tablespoon sesame seeds toasted
  • cup extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 2 teaspoons Sriracha sauce or Chinese chile-garlic sauce
  • ½ teaspoon crushed red pepper flakes optional

Method
 

Salad Preparation
  1. In a large bowl, combine the coleslaw mix, snap peas, cucumber, red pepper, jalapeño pepper, cilantro, and scallions.
  2. Season the chicken thighs with salt and marinate with 2 tablespoons of olive oil, lime juice, grated ginger, and minced garlic for at least 20 minutes.
  3. Grill the marinated chicken thighs over medium heat for about 8 minutes or until fully cooked.
  4. In a separate bowl, whisk together rice vinegar, reduced sodium Tamari, sesame oil, honey, additional garlic, ginger, sesame seeds, extra virgin olive oil, fresh lime juice, Sriracha sauce, and crushed red pepper flakes to create the dressing.
  5. Once the chicken is cooked, slice it and add it to the salad mixture. Drizzle the dressing over the salad and toss to combine.
